Baked methi mathis

Ingredients:

3 cups Bisquick
1cup maida
3/4 C oil
3/4 C milk
3 tsp shah jeera
3Tsp Kasuri methi or fresh/ frozen
1/2Tsp salt

Directions:

Mix all very lightly. Make small balls and bake at 350’F for 1/2 hr. Leave in warm oven for 2 hrs so it becomes crispy. 

Tips:
Keep a watch and lower the oven temperature and time as these bake very fast.

Pecan chocolate bars

Gram cracker powder.....11/2 cup
Melted butter.............1 stick
Coconut flakes..........11/2 cup
Chocolate chips.........11/2cup
Pecans.......................11/2 cup
Condensed milk........1 can. 
 Directions:

Mix gram cracker pd with butter, press in a baking tray. Layer each ingredient with a drizzle of condensed milk and bake 350F till golden brown. Cut in squares.

Eggplant bhartha

Big eggplant.....1
Onion................1chop
Big tomato..........1chop
Ginger.............small piece grate
Green pepper ..chop
Coriander pd......1tsp
Red pepper.........1/2 tsp
Cumin seeds.....1/2 tsp( jeera)
Anchor or dry mango pd....1/2 tsp
Salt .......1/2 tsp
Oil.......:2 Tsp
Chopped cilantro

Peel, chop eggplant and in a Corning dish with lid on microwave for ten min.keep it covered till pan Masala is ready. 
In a non stick pan add oil when hot add cumin seeds. When they splutter add chopped onion ginger. When fried for five min add tomato. Fry till in a thick paste. Add all other spices. Add the cooked eggplant and keep stirring. You may cover for five min also at low heat to simmer. Keep stirring till it is blended well. Add cilantro and serve. 
PS you can add frozen peas also to onion paste and cook before adding cooked eggplant too

Potato paratha

Wheat flour.....3 cups
Water...........:11/2 cups
Salt.......1/2 tsp
Make a dough and cover, set it aside till you prepare the filling. 

Potato.......3 -4
Boil till soft
Directions

Peel while warm add 1/2tsp salt, 1tsp coriander pd , 1/2 tsp mango pd, chopped ginger and mash to make it smooth with no pieces. Using little oil make small balls. 
Make same size balls with kneaded wheat dough using dry flour. 
Roll the dough put the potato filling to roll in the paratha. Meanwhile keep the tawa hot before frying the paratha using little oil on both sides.

Poha for breakfast

Ingredients

Thick poha.................3 cups. Wash and soak for 5 min squeeze excess water. Add all the next five ingredients to it. 
Lemon juice ..............1 Tsp
Turmeric pd..............1/2tsp
Red chili pd...............1/2tsp
Salt...........................2tsp
Sugar........................1tsp 

Big onion ...................1 chopped
Big boiled potato ..................1 cut in small pieces
Frozen peas................3/4 cup thawed
Green chili .................1 chopped
Oil..............................4 Tsp
Mustard seeds...........1 
Fresh coriander leaves finely chopped.

Directions
Heat a pan add oil and mustard seeds. When they splutter add chopped onion, chilies and potatoes. Cook till little brown. Add peas covering the pan. Cook on low heat till peas are cooked. Add poha and 1/4 cup water mixing everything. Cover cook for another five min on low heat. Taste for more salt or lemon juice. Add chopped fresh coriander and serve with bhujia or dalbiji.

Carrot rice sticks

Rice sticks...........1/3 package. Boil in salted water till tender ( 3 min) drain and set aside
Carrots ................2-3 peel and grate
Ginger root ..........2" piece peel and grate
Green chili ...........chop
Curry leaves....few
Mustard seeds..........1tsp
Oil........................3Tsp
Lemon juice.........2tsp
Crushed roasted peanuts…. Optional
Green chopped cilantro leaves for garnish

Directions:
Heat oil in a heavy pan. Add mustard seeds. When they crackle add chopped chili, curry leaves and grated carrots. Stir till carrots are limp for two min. Add boiled rice sticks, stir and cover for two mins. Add lemon juice and cilantro along with crushes roasted salted peanuts (optional).

Maida.  71/2 C
Suji.    1/2 C
Oil.      11/4 C
Water. 11/2 C
Salt, whole blk pepper, ajwain
Oil for frying
Directions:
Mix everything in a bowl and rub. Cover and rest it for 15 min. Make small balls and roll. Prick each mathi with fork. 
Heat oil and fry on medium/ low heat till golden brown.

Besan Ladoo

Ingredients:
Besan…………..4 cups
Butter unsalted…21/2 sticks
Sugar………………2 cups
Elaichi powder, saffron….1/2 tsp 

Directions:
Roast besan with butter in heavy nonstick pan over low/ medium flame till golden. Cool a bit and add rest of stuff. Make about 36 balls.
